Recipe: Spicy Italian Pork & Beef Meatballs

You just can't go wrong with meatballs. Serve them with pasta or on a sub. Or when they're this good, you can just put them on a plate and enjoy just the meatballs.

We went the pasta route on Sunday evening, and this is the easy recipe we made, using hot Italian sausage from our farm and pasture-raised ground beef from 804 Cattle Company. It made 25 or 30 meatballs, plenty for our family of four. And we also had plenty of leftovers to enjoy throughout the week.

OK, they lasted through Monday. But only because they were that good!

  • 1 lb of hot Italian pork sausage
  • 1 lb of ground beef
  • 1 cup of bread crumbs
  • 2 egg whites
  • 1 tsp of crushed garlic
  • 4 tsp of honey dijon mustard
  • 6 tbsp of Parmesan cheese
  • 1 tsp of pepper
  • 1 cup of chicken stock


  • Pre-heat oven to 400 degrees
  • Mix ingredients well
  • Form into meatballs of your preferred size
  • Place on a greased baking pan
  • Bake 15-20 minutes
